Ingredients

    6 cooked potatoes sliced thin
    1/2 onion, sliced thin
    1/2 red pepper, sliced thin
    2 tbsp olive oil
    salt & pepper

Directions

Heat oil in a large skillet. Add potatoes, onion, & red pepper and cook until tender. Salt & pepper to taste.
