Ingredients

1 cup cornmeal
2 cups chicken stock
(water is OK, but stock has more flavor)
1 clove garlic, smashed
any spices you like -thyme, basil, etc
2 ounces parmesan cheese
Directions
bring stock to a boil adding in herbs you're using
When boiling, stream in cornmeal whisking continually to prevent lumps
Whisk for about 2- 3 minutes til creamy.
Add parmesan cheese and whisk again
Serve as a base for anything sautted mushrooms, braised lamb shanks, beef stew..
