Golden Curry - Gaeng Garee Gai

Introduction

Coconut milk, chicken, and yellow curry make this dish flavorful. Serve over rice with boiled potatoes. Can be as spicy or as mild as you'd like depending on what level of curry used. Ingredients

    16oz white meat chicken (diced or ground)
    1/4 cup garlic (or less if you wish)
    1/4 onion diced
    3 tbsp yellow curry
    1/4 cup fish sauce
    3 cups (24oz) coconut milk
    3 tsp sugar

Directions

Cook chicken in a nonstick pan until done and juices run clear (your choice of chicken will determine time). Remove chicken from heat. Gently sauteed onions and garlic until golden and remove from heat.
Pour coconut milk into large pot and bring to a boil. Add chicken and return to a boil for 3 minutes. Add all remaining ingredients including garlic and onion and simmer for at least 1 minute, longer if you want a thicker sauce.

Serve over rice.
