Introduction

a healthy girl's night dish! a healthy girl's night dish!
Number of Servings: 6

Ingredients

    1/2 a small onion
    2 tbsp light butter
    2 tsp extra virgin olive oil
    4oz Orzo pasta (whole grain)
    2 cups fat free chicken broth
    1 cup non fat greek yogurt
    20 large shrimp
    1 chicken breast (boneless/skinless)
    1/2 cup sliced almonds
    1 cup grated parmesan cheese
    1/4 cup plain bread crumbs

    Seasonings:
    kosher salt and pepper to taste
    1/2 tsp coriander
    1/4 tsp cumin
    1.5 tbsp parsley
    1/8 cup green onions


Directions

**poach chicken
-In seperate skillet:
**sautee onions in olive oil
*add butter to onions
**add orzo to onions to toast
**add chicken broth
**add raw shrimp to pasta in chicken broth
**cook pasta to al dente
Finish poaching chicken
**cube chicken
**add to pasta and shrimp mixture
**remove from heat and fold in yogurt, cheese, and almonds
**Put entire mixture into non stick casserole dish (spray w/ pam if needed)
**top w/ bread crumbs
Bake at 350 until bubbly and lightly browned.
