Ms Lucy's Shrimp Casserole

Introduction

Great cajun recipe...not spicy. Great cajun recipe...not spicy.
Number of Servings: 8

Ingredients

    1/2 cup onion
    1/2 cup celery
    1/2 cup bell pepper
    1lb shrimp
    2 tbsp of margarine
    1 lb of smoked sausage or andouille
    1 10.75 oz can of cream of mushroom soup
    1 10.75 oz of cheddar cheese soup
    1/2 cup green onions (shallots)
    2 3/4 cups cooked rice

Directions

saute shrimp in margarine
saute onions, green peppers, and celery in margarine
Add cream of mushroom soup and cheddar cheese soup, and shrimp to onion mixture.
Add rice and green onions. Mix thoroughly.
Pour into a 9 x 13 casserole dish sprayed with pam.
Bake @ 350 degrees for 30-40 minutes. Makes 8 servings.
