Steven's Gumbo

Introduction

Great cajun gumbo. Wonderful for those cold nights or big gatherings. Great cajun gumbo. Wonderful for those cold nights or big gatherings.
Number of Servings: 20

Ingredients

    1.5 cups of flour
    1 cup of oil
    1 medium onion chopped
    1 medium bell pepper chopped
    2 large stalks of celery
    2 tbsp of dried parsley
    1/2 cup chopped green onions (shallots)
    2 lbs of smoked sausage
    2 lbs of boneless skinless chicken thighs
    1 can of okra (drained)
    6 cups of water
    2 cups of chicken broth
    2 tbsp of season all or to taste
    8 large eggs (optional)
    rice (optional)








Directions

Make a roux.
1.5 cups of flour
1 cup of oil
Combine flour and oil over a medium flame, constantly stir. Keep stirring until a medium brown color.
Once brown add in the onions, green onions, celery,bell peppers,parsley. Mix well. Remove from heat.
Smother chicken and sausage for about 20 minutes then add to roux mixture. Add in 6 cups of water and 2 cups of chicken broth. Okra. Mix well.
Let simmer for about 2 hours. If you want eggs in it crack eggs and drop into gumbo one at a time.
Let cook another 30 minutes and add season all to taste. Serves 15 to 20 cups of gumbo.
Can cook rice and eat gumbo over rice if desired. 1 cup of cooked rice per serving.
