Ham, Artichoke, and Spinach Frittata

Introduction

A great use for leftover ham! Serve for brunch or dinner! A great use for leftover ham! Serve for brunch or dinner!
Number of Servings: 6

Ingredients

    2 tbsp olive oil
    1 medium white onion
    2 cups cubed ham
    1/2 can artichoke hearts
    2 cups uncooked spinach
    1/2 cup nonfat milk
    1 tsp garlic (minced fresh)
    1/2 cup grated parmesan cheese

Directions

Preheat oven to 400˚
In a large oven-ready skillet (I use cast iron) heat olive oil. Chop onion and cook in pan until tender but not brown. Add cubed ham, spinach, and artichoke hearts and saute until spinach is wilted. In a mixing bowl beat eggs, milk, and garlic together. With pan over medium heat pour egg mixture over vegetables and ham. Give a gentle stir to be sure egg surrounds everything. Cook on stove for about 5 minutes, just until it starts to get firm. Move pan to the oven and bake uncovered for 15 minutes. Sprinkle parmesan cheese and bake another five minutes.
Cut into pie-wedges and serve from pan. Makes 6 servings.
