Easy Veggie Chowder

Introduction

Number of Servings: 6

Ingredients

    1 tbsp olive oil
    3 sliced bacon, raw, chopped
    1 medium onion, chopped
    1 cup chopped celery
    1 cup diced potato or 1 cup fresh or frozen hashbrowns
    1 cup frozen corn
    4 cups low sodium chicken broth
    2 cups skim milk
    1/4 cup flour (white or wheat flour)
    4-5 sprigs of fresh thyme or 1 tsp dried thyme
    salt
    pepper

Directions

Heat olive oil in a large pot. Add bacon, cook for a few minutes until slightly cooked, but not browned. Add onion, celery and thyme. Cook until veggies are soft, about 5 minutes. Sprinkle flour over veggies and stir well. Add chicken broth and bring soup to a boil. Reduce heat to a simmer. Add potato and corn. Cover and simmer over low for 30 minutes. Remove cover. Add milk, continue to simmer until soup is hot. Salt and pepper to taste.
