Whole Grain Coffee Cake

Number of Servings: 5

Ingredients

    1/2 c wheat
    1/2 c. dry oats
    1/4 c. flaxseed meal
    1/3 c. smart balance
    1 1/2 c. brown sugar
    1 t baking powder
    1/4 t cinnamon
    1/2 t nutmeg
    1 egg
    1/2 c lowfat buttermilk

Directions

Grind wheat and oats. Add grains, sugar and butter and mix until crumbly. Reserve 1/4 cup. Add remaining ingredients and mix. Pour into a 8x8 glass baking dish and sprinkle reserved mix on top. Bake in pre-heated 350* oven for 30 mins or until done.
