Old-Fashioned Goulash

Submitted by: POOHSHUNNY

Introduction

This was a staple in our home when I was growing up and I still make it today as a comfort food. We used home-canned tomatoes when I was a child and added Italian seasoning. Ingredients

1 lb. extra lean ground beef, browned and drained
1 14.5 oz. can diced Italian tomatoes
1 8 oz. can tomato sauce
1 large green bell pepper, diced
    1/2 onion, diced
    1 clove garlic, minced
    1 T. chili powder (optional)
    1/2 tsp. ground cumin (optional)
    Salt & pepper
    1 c. elbow macaroni, uncooked

Directions

Brown ground beef in large skillet; drain off grease. Add onion, bell pepper, garlic, chili powder and cumin (if desired). Salt and pepper to taste. Cook until onion and pepper are softened; add tomatoes and tomato sauce. Let simmer about 5 minutes. Meanwhile, cook the macaroni according to package directions in boiling water until done. Drain and rinse macaroni; add to the meat mixture in skillet and gently simmer for 5-10 minutes so the flavors can meld.

You can add a bit of grated parmesan cheese to the top of each serving, if desired.
