Beef Veggie Curry

Introduction

Number of Servings: 5

Ingredients

    1/2 lb beef ( add more for a beefier stew)

    Finely Chop:
    2 cloves of garlic
    1 inch of ginger (1 tbsp)
    1 jalapeno pepper

    Corsely chop:
    2 onions
    1.5 C zucchini
    1.5 C mushrooms

    2 cups diced canned tomatoes (drained)
    2 cups beef broth

    fresh cilantro ( 4 tbsp )
    curry powder ( 2 tbsp )
    ground cumin ( 1/2 tbsp )
    *** or to your tastes ***

    1/2 red pepper


Directions

Brown beef quickly and add to slow cooker.

Finely chopp garlic, ginger and Jalanpeno.

Corsely chop onion, red pepper, zucchini and mushrooms.

Add all ingredients to slow cooker and top with 2 cups of diced tomatoes and 2 cups of beef broth.

Mix together adding cilantro, cumin and curry powder to taste.

Cook for 4-6 hours, remove 1 - 1.5 cups of fluid near the end and use it to cook rice for a side dish. *** If you are not making rice to go with this dish add only half the tomatoes and broth called for reserving the rest on the side to add if the stew becomes too thick.

Makes 4-6 servings.
