Chicken and Wild Rice Soup

Number of Servings: 6

Ingredients

    1 package long grain and wild rice mix
    2 tbsp smart balance
    2 tbsp flour
    2 C 1% milk
    3 C fat free chicken broth
    1 1/4 lbs. cooked and cubed chicken breasts
    11 oz frozen corn, cooked
    1 tsp dried minced onion
    1/4 tsp garlic powder
    1/8 tsp ground red pepper

Directions

Prepare rice mix according to package directions, omitting butter. Set aside. Melt butter in Dutch oven over medium heat. Whisk in flour; cook 1 minute. Gradually whisk in milk and chicken broth; bring to a boil and boil, whisking constantly, 1 minute. Stir in cooked rice, chicken and next 4 ingredients. Reduce heat and simmer 5 minutes or until thoroughly heated.
Makes 5-6 1 cup servings.
