Vegetable Fried Rice

Introduction

Quick and a great way to use up leftover rice. You can use frozen veggies, or leftovers from your fridge. Quick and a great way to use up leftover rice. You can use frozen veggies, or leftovers from your fridge.

Ingredients

    4 c. long grain rice, cooked
    4 tbsp. soy sauce
    1.5 tbsp. olive oil
    1.5 c. frozen peas and carrots
    1 c. mushrooms, canned, stems and pieces

Directions

Put the oil in a frypan, next put in the rice, mix with the soy sauce. Then add the vegetables and turn on medium heat. Stir frequently.

You can add canned shrimp, or pieces of leftover meat. Meat not included in the nutritional info.
