French Toast

Introduction

I had leftover small dinner rolls and decided to make mini french toasts with them. I used vanilla soy milk instead of regular milk or cream. I also used very little butter to cook them. Number of Servings: 4

Ingredients

    9 small dinner rolls
    2/3c Vanilla Soy Milk
    4 lg Eggs
    2T sugar or maple syrup
    1t vanilla
    Pure maple syrup
    Butter for cooking

Directions

Mix all ingredients together.
Add bread, a piece at a time to mixture, letting it sit until moist but not falling apart.
Fry until golden, a few minutes per side. If you use a non-stick pan, there's no need to add tons of butter.
Drizzle with pure maple syrup.

  • I liked using soy milk for the protein and the use of the leftover rolls. We eliminated the sugar as the soy milk is already sweet and instead added a bit of cinnamon then used unsweetend apple sauce instead of maple syrup. - 1/24/09
