Ingredients

1.5 tbsp curry powder (fresh)
0.75 lb chicken breast
olive oil spray
salt
pepper
0.33 cup water
3 tbsp apricot jam
0.25 cup heavy whipping cream
2 tbsp scallions
Directions
Place curry powder on a plate. Toss the chicken in the curry powder, making sure all sides are coated.
Heat a non-stick skillet over medium-high heat and coat with olive oil spray.
Add the chicken and cook until no longer pink inside.
Remove to a clean plate
Add water and apricot jam to the skillet and simmer 30 seconds, stirring to melt jam.
Add cream and simmer 1 minute to thicken sauce.
Add salt and pepper to taste.
Spoon sauce over chicken.
Scatter scallions on top.
