Middle Eastern Salad

Introduction

The combined flavours of Flat leaf (italian) parsley, olives, onions and lemons give this salad a fantastic authentic middle eastern flavour.

You could replace the cheese with Halloumi or any other middle eastern/greek/turkish cheese that you like. I use light to keep the calories down.

Number of Servings: 8

Ingredients

    2 Ripe Tomatos - roughly chopped
    1/2 a cucumber - roughly chopped
    1/2 an Iceberg lettuce - roughly chopped
    Juice and zest of 1/2 a fresh lemon (or lemon juice if no fresh available)
    1 Tbsp of red onion finely chopped
    1/2 cup of pitted green olives
    1/2 cup of flat leaf parsley - roughly chopped
    1/4 cup of feta cheese - crumbled

Directions

Basically chop it all up and mix it all together.

serve with almost anything to get your veg quantities up. Great at lunch time, with some hummous spread ona tortilla
