Pasta Primivera

Ingredients

    1/2 cup baby zucchini, cut into half moons
    1 1/4 cup tomato sauce
    1 cup fresh spinach, coarsely chopped
    1 tsp ground oregano
    1 clove of garlic, chopped
    1 tbs extra virgin olive oil for sauteing
    1/2 cup of cherry tomatoes, cut into halves
    Salt and Pepper to taste
    12 oz pasta of your choice, cooked

Directions

Saute chopped garlic in the extra virgin olive oil over medium heat. Add zucchini and continue to saute until almost tender (3-5 minutes). Add tomatoes, spinach, tomato sauce, oregano, salt and pepper. Continue simmering until vegetables are tender and sauce is well blended (2-4 minutes). Serve over pasta and enjoy! Makes 2 servings.
