"Nutty" Chicken Sauce

Ingredients

2 boneless, skinless chicken breasts, frozen
1 28oz can crushed tomatoes
1 16oz can diced Italian tomatoes
1/2 cup dry roasted edamame
1 tsp crushed garlic
1 tbsp olive oil
Water
Lemon Pepper (seasoning)
Dried parsley
Chili powder
Kosher salt
Directions
Fill a microwave-safe bowl approximately 1 inch deep w/water. Place frozen chicken breasts in bowl. Sprinkle with Lemon Pepper and coarse salt. Microwave on "defrost" setting 6-8 minutes until chicken is softened but not cooked. Cut chicken into cubes.
Put olive oil in a frying pan. Add chicken cubes and saute until mostly cooked. Add garlic, parsley, and black pepper to taste, then saute a few minutes longer to combine flavors.
Add crushed and diced tomatoes, stir well, and reduce heat to low.
Using a blender or food processor, reduce edamame to powder. Add edamame powder to mixture in pan, stir well. Add approximately 1 cup of water (more or less depending on how thick you like your sauce) and mix well.
Bring sauce to a boil, reduce heat, and simmer 5-7 minutes.
Serves 2-4 (2 if you want leftovers).
Serving size = approx. 1 cup
Works nicely over whole wheat milled flaxseed fettucine
