Morning Glory Muffins

Introduction

This muffins are delicious! And with carrots, apples, raisins and pineapple in them, it's hard not to appreciate the health factor.

I use whole wheat flour and applesauce. You can use all-purpose flour if you'd prefer. The original recipe calls for a cup of oil instead of applesauce and 1/2 cup shredded, sweetened coconut, but those add the calories and fat.

Ingredients

    1 1/4 cups sugar
    2 1/4 cups f;lour
    1 tablespoon ground cinnamon
    2 teaspoons baking soda
    1/2 teaspoon salt
    3/4 cup raisins
    1 large apple, peeled and grated
    8 ounces (1 cup) crushed pineapple, drained
    2 cups grated carrots
    1/2 cup coarsely chopped pecans or walnuts
    3 large eggs
    1 unsweetened applesauce
    1 teaspoon pure vanilla extract

Directions

Mix sugar, flour, salt and baking soda together. Add raisins, nuts, carrots, apples, pineapples and coconut (if you are using coconut.) In a separate bowl whisk eggs, vanilla and applesauce/oil together. Then stir all ingredients together.

Spoon into muffin cups and bake in 350 degree oven for 30 minutes or a toothpick inserted in the middle comes out clean.

Makes 36 smallish muffins.
