Chicken Marsala

Ingredients

    Mushrooms, fresh, 2 cup, pieces or slices
    Sage, ground, 1 tbsp
    Red Wine, 2 fl oz
    Beef broth, bouillon, consomme, .25 cup
    Chicken Breast, no skin, 20 ounces
    Whole Wheat Flour, 0.125 cup
    Olive Oil, 1 tbsp
    Butter, salted, 1 pat (1" sq, 1/3" high)
    Butter, salted, 1 tbsp
    xanthan gum to thicken

Directions

Lightly coat chicken breasts with flour. Melt butter and heat oil in skillet and cook chicken until brown on both sides and cooked through. Remove from pan and cover to keep warm. Deglaze pan with wine and broth, scraping up browned bits. Add mushrooms and sage and cook until tender. Let sauce reduce by half on stovetop. Whisk in 1 tbsp. butter and xanthan gum to thicken to taste. Add chicken back to pan to heat through.
