Healthier Spinach Artichoke Dip

Ingredients

    -10oz block of frozen spinach
    -14 oz can of artichoke hearts
    -1 8oz package of light cream cheese
    -1 8oz package of fat free cream cheese
    -1 T lemon juice
    -1 onion, minced
    -4 cloves garlic, minced
    -1/3 c. reduced fat parm cheese
    -.5 tsp oregano
    -nonstick cooking spray

Directions

Spray a medium pot with nonstick cooking spray. Add garlic and onions and cook over medium heat until they are translucent (5 min). Put thawed and drained frozen spinach in food processor and pulse a few times to chop. Add artichokes and pulse a few more times. The mixture should be chunky. Add spinach and artichokes to pot, along with cream cheese, oregano, and lemon juice. Heat until bubbly, then add parm cheese. Serve immediately.

Makes 4.5c. (1 serving= 1/4 c.)
