Sweet Sugarless Cookie

Ingredients

1&1/2 cup plain flour
1/2 tsp sea salt
1/2 tsp baking powder
1/4 tsp ground nutmeg
2 eggs
1 packet of Stevia
1 cup (2 sticks)Smart Balance 50/50 unsalted butter blend, softened
Directions
1. Preheat the oven to 350°F(180°C). Lightly grease a cookie sheet and set aside.
2. In a medium mixing bowl, sift together the flour, salt, baking powder, and nutmeg; set aside.
3. Place the eggs and stevia in a large bowl, and beat with an electric mixer until well combined. Slowly add the butter, continuing to beat until the mixture is smooth and creamy.
4. Using a wooden spoon, ad the flour mixture to the butter mixture, 1/2 cup at a time, stirring well after each addition.
5. Form the dough into 2 inch balls and place them 2 inches apart on the cookie sheet. Flatten the balls slightly with the bottom of a glass. Bake 20-25 minutes or until the cookies are golden brown.
MAKES 18 COOKIES(1 COOKIE PER SERVING)
