Katie's Enchilada Sauce

Introduction

I've snuck in some extra vegetables for extra goodness! I've snuck in some extra vegetables for extra goodness!
Number of Servings: 8

Ingredients

    2 cans tomato paste
    3.5 cups vegetable soup, pureed
    2 cloves garlic, grated (I use a microplane grater)
    1 tsp ground cumin
    1 tsp ground chipotle
    1 tsp ground oregano
    1 tsp smoked paprika
    1 tsp shallot salt (or onion salt, but shallot salt has a deeper flavor)
    1/2 tsp fresh ground black pepper

Directions

Combine all ingredients in a medium sauce pan. Bring to a boil then reduce to a simmer for about five minutes. (Watch out - it can splatter!) You can add more vegetable broth for a thinner sauce if you like. Makes approx. 8 1/2-cup servings.
