Cucumber Salad

Introduction

Refreshing cucumber with mayo/sour cream and dill dressing. Low carb. Refreshing cucumber with mayo/sour cream and dill dressing. Low carb.
Number of Servings: 4

Ingredients

    2 medium cucumber
    .5 cup mayonnaise
    .25 cup sour cream
    2 to 3 Tbsp fresh Dill weed, finely chopped
    salt

Directions

Combine mayonnaise, sour cream and fresh dill in bowl. Cover and refrigerate. Peel cucumber, slice lengthwise, then cut into approximately 1/2 inch slices. Place in colander and sprinkle with sea salt or kosher salt. Let stand one to several hours to draw out excess water in cucumber. Pat dry and add to dressing. Return to refrigerator to cool. Serve same day.
