Healthy Banana Bread

Introduction

Adapted from Cooking Light (Nov 2006) but made even more healthy in my kitchen.

Ingredients

    1/2 C sugar
    1/3 C no sugar added applesauce
    1T oil
    2 large eggs
    1/2 C bread flour
    1 C whole wheat flour
    1 tsp baking soda
    1 tsp salt
    1 tsp cinnamon
    1/4 tsp nutmeg
    1 (6oz) low-fat vanilla yogurt
    2 very ripe medium bananas
    1/4 tsp vanilla extract
    cooking spray

Directions

Preheat oven to 350'

Mix sugar, applesauce and oil until well blended. Add eggs on at a time and mix well.

Lightly sppon flour into measuring cups and level with knife. Mix flour, soda, salt and spices in separate bowl.

Alternate flour and yogurt into sugar mixture (start and end with flour). Fold in bananas and vanilla.

Pour batter into 8"x4" loaf pan coated iwth cooking spray

Bake 45-60 minutes.

Cool for 10 minutes in pan on wire rack; remove from pan and cool completely.
