Chicken Tortilla Soup

Introduction

This is an easy to make and extremely tasty variation on a favorite Mexican soup. This is an easy to make and extremely tasty variation on a favorite Mexican soup.
Number of Servings: 8

Ingredients

    3 Chicken Breasts
    1 Can of Ro-Tel Diced Tomatoes & Green Chilies(mild)
    2 Cans of Chicken Broth
    1 Can of Black Beans
    3 Cloves of Garlic
    1/2 Onion

Directions

*Prepare chicken - I like to saute it in pan sprayed with Pam. Season with salt, pepper, and garlic salt. Set aside to let cool, the shred.

*In large pan spray with Pam and saute onions and garlic, then add chicken broth, Ro-Tel, Black Beans and shredded chicken.
*Add seasoning to taste - 1 tsp. - oregano, garlic powder, pepper
*Bring to a boil, then reduce heat to lo and simmer for 5-10 minutes.

*If you really like it spicy use original Ro-Tel.
