Black Bean Soup

Introduction

Nice spicy bean soup. Nice spicy bean soup.
Number of Servings: 8

Ingredients

    2 lbs dried black beans, soaked overnight
    1 large onion chopped
    3 stalks celery, chopped fine
    4 cloves garlic, minced fine
    2 10oz cans mild rotel tomatoes and chilie's
    12 oz frozen corn
    salt, pepper and cilantro to taste'

Directions

After soaking beans all night, drain and replace with enough water to slightly more than cover. Add chopped vegetables and simmer until beans are almost tender enough to eat. Add rotel and cook 30 minutes longer. Add corn and seasonings to taste. I sometimes add a few red pepper flakes to spice things up. Serves 8
