Shrimp and Spinach 'Alfredo'

Introduction

Cheesy, creamy shrimp and pasta dish. Not a traditional Alfredo and a little calorie-heavy, but definitely a good substitute for the real thing. Cheesy, creamy shrimp and pasta dish. Not a traditional Alfredo and a little calorie-heavy, but definitely a good substitute for the real thing.
Number of Servings: 3

Ingredients

    2 servings whole grain Pasta
    8oz Shrimp, cooked & de-veined
    1/2 tsp Cayenne Pepper
    1/4 tsp Salt
    1/4 tsp Pepper
    2 Tablespoons Olive Oil
    4 medium cloves of Garlic, finely minced
    2 tablespoons Shallot, finely minced
    1 tablespoon fresh Dill, finely chopped
    1/2 teaspoon Oregano (dried)
    1/2 cup shredded Parmesan
    1/2 cup Non-Fat Plain Yogurt
    1 ounce Neufchatel Cheese
    1/4 cup Milk (1%)
    1 cup frozen Spinach

Directions

1. Prepare Pasta according to package instructions. Reserve 1/8 cup of water then drain pasta and set aside.

2. Remove tails from shrimp, place in small bowl and add Cayenne pepper, Black Pepper and Salt, tossing shrimp to coat evenly.

3. Place olive oil into a skillet and heat over medium to medium high heat.

4. Add Shallots and Garlic to skillet and cook over medium heat until golden brown. Be careful not to burn the garlic.

5. Add dill and oregano to garlic mixture and heat an additional 2 minutes.

6. Combine Yogurt, Neufchatel Cheese, Milk and water with the garlic and herb mixture in skillet. Heat over medium for about 2 minutes or until melted and well combined.

7. Add Shrimp to skillet and allow to cook approximately 3 minutes.

8. Stir frozen spinach into mixture, stirring constantly until mixture is heated through.

9. Add drained Pasta and continue to stir to coat the pasta evenly. Allow to cook 5 to 7 minutes.

10. Remove from heat and serve. Top with additional shredded parmesan if desired.

Makes 3 to 4 servings
