Summer Tomato Pasta

Introduction

This is a really good pasta dish, made lighter by the whole wheat pasta. This is a really good pasta dish, made lighter by the whole wheat pasta.
Number of Servings: 4

Ingredients

    2 ¼-cups dried penne pasta, whole wheat, cooked

    2-cups chopped tomatoes

    10 ounces mozzarella cheese, shredded

    4-Tablespoons Olive Oil

    1-Tablespoon Balsamic Vinegar

    1-Tablespoon lemon juice

    1 ½-Teaspoons basil

    ½-Teaspoon salt

    1 dash black pepper

Directions

1. Mix together the olive oil, balsamic vinegar, lemon juice, and basil. Season with salt and pepper. Add the tomatoes and mozzarella.


2. Drain the pasta and toss with the tomato mixture.
