The apple-celery raisin mixture keeps in the refrigerator for a couple days. Add it to fresh spinach when serving and add extra dressing that has been reserved. (For additional dressing the mixture is 2 parts sour cream to 1 part lemon juice sweeten to taste and add vanilla yogurt to taste. Ingredients

1 Apple
4 Stalks Celery
1/3 c Raisins, packed
4 oz container of Vanilla Light Fat Free yogurt
(I used Activia)
Cinnamon to taste
Sugar to taste
1/2 c Light Sour Cream
1/4 c Lemon Juice
Fresh spinach
Directions
4 servings
Dice apples and celery.
Add raisins to boiling water to soften and drain them.
Mix yogurt, splenda, lemon juice ,yogurt , and cinnamon for a dressing.Add some to the salad mixture to keep apples from turning brown.

Put spinach in a bowl add the apple mixture and more of the dressing to coat the spinach.
