California Roll

Number of Servings: 6

Ingredients

    1 cup medium grain rice, dry
    1.25 cups water
    2 TBS rice vinegar
    1 TBS sugar
    1/2 tsp salt
    3 sheets nori
    1 1/2 tsp sesame seeds
    1/2 avocado
    1/4 English cucumber quartered and seeded
    3.5 oz imitation crab
    wasabi powder to taste

Directions

Make Sushi Rice:
-rinse rice in a fine mesh sieve till water runs clear
-soak rice in 1.25 cups water for 30 minutes
-bring rice to a boil, turn down heat and cover. Simmer 10 minutes. Turn heat up to high for 1 minute, then remove rice from heat and allow to steam for 20 minutes (covered)
-mix rice vinegar, sugar, salt and warm to dissolve.
-sprinkle vinegar mixture over rice and toss with wooden spoon to coat.

Assemble Sushi:
-spread 1/3 of rice on a sheet of nori and sprinkle with 1/3 of sesame seeds. Flip over onto a piece of waxed paper (or a plastic wrap covered bamboo mat) so the rice is facing down towards your work surface.

-lay 1/3 of remaining ingredients in a horizontal line across the center of the nori. Sprinkle with wasabi powder.
-roll and cut sushi as illustrated here:
