Chili con Bambi (and Quorn) in slow cooker

Introduction

Number of Servings: 6

Ingredients

    Venison, ground, 16 oz
    Onions, raw, 2 cup, chopped
    Peppers, sweet, red, fresh, 2 cup, chopped
    Canned Tomatoes, 2 can
    Beans, red kidney, 240 grams
    Beef broth, bouillon, consomme, 2 cup
    Quorn mince, 300 gram(s)
    2 tbsp extra virgin olive oil
    mixed chili spices, to taste

Directions

Pan fry onions and peppers in 1tbsp olive oil until softened. Move to slow cooker along with drained, rinsed kidney beans and brown venison mince in remaining oil. Drain fat and add spices, fry 2 more minutes, then add tomatoes and beef stock. Heat until bubbling and transfer to slow cooker. Stir until well mixed with vegetables. Slow cook for desired length of time- at least 5 hours on medium or high, can cook on low overnight and through the day for fullest flavour. Add Quorn mince 3 hours before finishing if desired. If not, use another 200-300g venison mince. Serve over rice. Makes 6 good sized servings.
