Venison Chili

Introduction

A simple chili, made entirely from scratch, with no bell peppers. A simple chili, made entirely from scratch, with no bell peppers.
Number of Servings: 8

Ingredients

    1 lb bag dry Small Red Beans, soaked and rinsed
    6 cups water
    2 Tbsp Salt
    5 Tbsp Chili Powder
    5 Tbsp Cumin
    2 Tbsp Ground Red Pepper/Cayenne
    2 Tbsp Onion Powder
    1 Tbsp Garlic Powder
    2 Lbs ground Venison
    2 Large Tomatoes, diced
    4 cups tomato sauce

Directions

In large pot, combine soaked and rinsed beans with 6 cups of water, 1 Tbsp salt, 2 Tbsp Chili powder, 2 Tbsp Cumin, .5 Tbsp ground red pepper, 1 Tbsp onion powder, and .5 Tbsp Garlic powder.

Bring to a low boil and cook until beans are tender, approx 2 hours.

Meanwhile, In a large skillet combine Venison, 2 Tbsp Chili Powder, 2 Tbsp Cumin, and .5 Tbsp ground red pepper. Brown Venison, drain, and add to tender beans.

Add diced tomatoes, and tomato sauce and simmer on low heat until done, approx 2 hours.

Remaining spices may be added to taste while simmering.

Additional salt and pepper may be added if desired, and chili is good served with .25 cup shredded cheese and a slice of cornbread.


Note that onion powder may be replace by diced onions, but my family prefers a simpler chili.
