Sheppard's Pie

Ingredients

    1 pound extra lean ground beef
    1 onion (medium) diced
    3 cloves garlic
    1 can mushroom pieces
    10 oz. mixed vegetables
    2 cup dry macaroni (cook according to package instructions)
    1/4 tsp basil, tarragon, pepper
    dash sea salt
    Mashed potatoes (add 1/4 - 1/2 cup milk and 2 eggs to make potatoes the consistency of condensed mushroom soup) Garlic is optional to the mashed potatoes.

Directions

Brown beef, onion, mushrooms and garlic. Add mixed vegetables and cooked macaroni. Pour mixture into 9x13 oven proof dish. Cover with mashed potatoe mixture trying to make sure there are no bare spots on the vegetables. Bake in 350 F. oven for 60 minutes or until potatoes are brown. Serve with salad. Makes a really nice comfort food night.
