Black Beans and Rice

Introduction

I cook black beans and rice in bulk ahead of time, store them separately in the refrigerator, then reheat them and combine ingredients one serving at a time. Combining everything ahead of time and reheating works too! All amounts of spices can be added "to taste" depending on your prefered spice level.
Yummy vegetarian dish!
Reheats well.

Ingredients

    1/2 cup, brown rice (cooked)
    1/2 cup, black beans (cooked)
    1 tsp. lemon juice
    1/8 tsp. dry ground mustard
    1/8 tsp. ground cumin
    1/8 tsp. thyme
    1/8 tsp. crushed red pepper flakes
    1/8 tsp. garlic salt
    2 slices pepperjack cheese
    2 tbsp. green salsa


Directions

Combine brown rice and black beans.
Heat in microwave for 2 minutes.
Add spices, lemon juice, cheese, and salsa to hot rice and beans and mix well.
Makes 1 serving.
