Directions

In heavy saucepan simmer

1 12-oz can clam broth (or 1 fish bouillon cube in 2 cups water)
2 diced potatoes
2 diced celery stalks
1 diced onion
1 lb. white fish fillets

When vegetables are tender, season with
1 tsp basil 1.5 tsp onion salt
1 tbsp parsley flakes 1 tsp celery salt
.25 tsp pepper


In small pan melt 0.25 cups butter,
Stir in 0.25 cups flour. cook over low head 5 minutes, stirring constantly. Stir roux into vegetable and fish fix; simmer until thickened.

Add 1 cup milk
1 cup light cream

Simmer 10 minutes.

Serve garnished with lemon wedge.

Makes about 8 1 cup servings
