Cabbage Rolls with a Makeover

Introduction

Ingredients

    Base:
    2 cups baby carrots, sliced lengthwise
    16 large cabbage leaves

    Filling:
    2 tablespoons olive oil
    1/2 cup chopped onion
    2 teaspoons minced garlic
    1 pound ground turkey (93% lean)
    1 cup diced green bell pepper
    1 (8 ounce) can tomato sauce
    1/2 teaspoon salt
    1/2 teaspoon ground black pepper
    2 tsp. granulated sugar
    Cayenne pepper to taste
    1 cup cooked long grain white rice
    1 egg, beaten

    Sauce:
    1 (8 ounce) can tomato sauce
    1 (6 ounce) can tomato paste
    1/2 cup water
    3 tablespoons brown sugar
    2 teaspoons lemon juice
    1 teaspoon Worcestershire sauce

Directions

1. Line base of 9x12 glass baking dish with baby carrots sliced lengthwise.
2. TO GET 16 LARGE CABBAGE LEAVES: Boil full head of cabbage in stockpot for 5-10 minutes to soften. This makes it MUCH easier to remove (and later roll) the leaves (which tend to tear if you try removing them raw).
3. In olive oil, saute the onions and garlic, but do not let them brown. To this pan, add the turkey and green peppers, and cook through.
4. Finally, add tomato sauce, and season to taste. Remove from heat and let cool.
5. Once cooled, add egg and mix thoroughly.
6. Mix sauce in small bowl.
7. Make rolls by placing ~ 2 Tablespoons in a cabbage leaf and rolling it up like a tiny burrito (tuck in ends and roll into log).
8. Place rolls seam-side down on top of carrots in baking dish.
9. Pour sauce over rolls and spread evenly.
10. Cover and bake at 350 degrees (F) for 60 minutes, removing cover for last 10 minutes. Serve.
