Fabulous Pumpkin Bars (Spelt or Whole Wheat)

Introduction

This is an amazing pumpkin bar that is made with whole wheat or spelt flour. It is moist and yummy. It can also be made vegan. This is an amazing pumpkin bar that is made with whole wheat or spelt flour. It is moist and yummy. It can also be made vegan.
Number of Servings: 15

Ingredients

    1/2 cup butter (or Earth Balance)
    1 cup brown sugar packed
    1 cup whole wheat or spelt flour
    2 eggs (or egg substitute)
    1 cup pumpkin puree
    1 tbsp vanilla
    1 tsp baking soda
    1 tsp baking powder
    1 tsp ground cinnamon
    1/4 tsp ground ginger
    1/4 tsp ground allspice
    1/4 tsp ground nutmeg
    1/4 tsp salt

Directions

Preheat oven to 350 F.
Cream together butter and sugar. Add the pumpkin puree, eggs, and vanilla, mixing well.
Slowly add dry ingredients.

Grease a 9x13 pan, either with butter or oil.
Pour into the pan and spread it to cover.

Bake for 20-25 minutes until a knife inserted into the center comes out clean.

*I didn't have these exact spices so I used 1 1/2 tsp of pumpkin pie spice and 1/4 teaspoon of cinnamon. You can add extra cinnamon if you like it a little spicier.

* You can add in flax meal, semi-sweet chocolate chips, and pecans or walnuts if you'd like. That will change the calorie count.

This makes 15, 2.5-3 inch squares.
