Introduction

Tasty and spicy vegetarian Indian dish. Low in fat and high in fiber. Make extra to have for lunch the next day! Tasty and spicy vegetarian Indian dish. Low in fat and high in fiber. Make extra to have for lunch the next day!
Number of Servings: 4

Ingredients

    2 Tbsp. olive oil
    1 medium onion, chopped
    1 garlic clove, minced
    1 Tbsp. curry powder
    3 Tbsp. tomato paste
    1 can chickpeas (reserve 3 Tbsp. liquid)
    1 Tbsp. lemon juice
    red pepper flakes
    salt and pepper

Directions

Heat oil on medium heat. Saute onions until soft.
Reduce heat. Add garlic, curry, and tomato paste.
Stir and simmer for 2 minutes.
Add chickpeas, liquid, lemon juice, salt, and pepper.
Simmer 5-6 minutes. Stir occasionally.
Add red pepper to taste. Simmer a couple of minutes longer.
Serve over brown rice.
