Indian Curry Rice



Introduction

A fragrant and tasty variation of plain, old brown rice. A fragrant and tasty variation of plain, old brown rice.
Number of Servings: 8

Ingredients

    Non-stick cooking spray
    1/2 cup chopped onion
    1 cup chopped celery
    1 cup sliced mushrooms
    1 unpeeled red apple, cored and diced
    1/2 teaspoon poultry seasoning
    1 teaspoon curry powder
    1/4 teaspoon allspice
    1/4 teaspoon salt
    1/8 teaspoon white pepper
    1 cup brown rice, uncooked
    2 1/4 (or more) cups no fat low sodium chicken broth (or vegetable broth, if vegetarian)
    Sesame seeds, peanuts, boiled eggs, golden raisins for topping (according to personal taste)

Directions

Spray large skillet with non-stick cooking spray. Spread onion, celery, mushrooms, and apple in the skillet, adding part of the chicken broth to allow for "sauteeing" the mixture. Add the poultry seasoning, curry powder, allspice, salt and pepper. Stir. Add the rice, stirring for 2 minutes until it's coated with the spices. Add the remaining broth and heat to boiling. Lower the heat to low, cover, and let simmer for 30 minutes. Watch carefully to avoid drying out. Makes 8 servings. Yum!!!
