Tigerlily's Crock Pot Chicken for Two

Introduction

Number of Servings: 2

Ingredients

    8 ounces boneless skinless chicken breast
    1/4 cup sundried tomatoes [the dried kind, not the ones packed in oil]
    1 small chopped onion
    8 ounces baby carrots
    1 cup water [boiling]
    1 teaspoon Knorr Chicken Boullion Granules

Directions

Place the carrots, onion, and tomatoes in the bottom of a small crock pot.

Lay the chicken breasts [or tenderloins] on top of the veggies.

Dissolve the boullion granules in the cup of boiling water and pour on top of the chicken. Add a little pepper and dried herbs of your choice.

Cover and set timer on low for 6 hours or until the chicken is no longer pink.

Yields two servings.

Serve this with brown rice, whole wheat couscous, or quinoa [not included in nutritional information]
