Introduction

I loved this recipe. I made SLIGHT revisions to make it heartier because we do soup as a meal with a whole grain bread of our choosing. It depends on what's in the house. I loved this recipe. I made SLIGHT revisions to make it heartier because we do soup as a meal with a whole grain bread of our choosing. It depends on what's in the house.
Number of Servings: 6

Ingredients

    1 TBS. extra virgin olive oil
    1 large onion
    3 large stalks celery
    3 large carrots
    1 clove garlic
    1 1/4 cups dried lentils
    6 cups water
    1 TBS. miso
    1 cup cooked, chopped mustard greens
    1 tsp. black pepper

Directions

Makes 6 servings

*Heat oil in large saucepan over medium heat.
Add all the vegetables and garlic and cook for about 3 minutes.
*Add water, lentils, miso, and black pepper. Cook on medium/medium-low for 1 1/2 hours.
*Add precooked and chopped mustard greens and cook for 1/2 hour more.
