Quick vegetable soup

Introduction

Delicious vegetable soup - can lower the sodium by using low sodium broth. Delicious vegetable soup - can lower the sodium by using low sodium broth.
Number of Servings: 4

Ingredients

    1 cup of chopped carrots
    1 cup of chopped celery
    3 scallions sliced
    1 cup chopped cabbage
    1 cup dry egg noodles
    1 tablespoon olive oil
    6 cups veggies stock

Directions

Chop all veggies.

In large pot heat olive oil with med high heat, add all veggies, and saute for 15 minutes. Add veggie stock, and noodles - boil until noodles are tender - about 15 minutes.

Makes 4, 1.75 cup servings. (4 soup bowls)
