Home Made Spicy Vegetable Soup

Introduction

Low fat spicy vegetable soup Low fat spicy vegetable soup
Number of Servings: 8

Ingredients

    6 carrots, 1 medium turnip, 1 medium onion, 1 small leek, 1 tin of chopped tomatoes, 3 vegetable stock cubes, 1 tspn garlic, 1 tsp chilli powder, 1 tbsp tomato puree, salt, pepper to taste and 3 pints of water.

Directions

Makes 8 servings
Chop Carrots, onion, leek, turnip and place in pot with 3 pints of water. Bring to boil and add tomatoes, garlic, tomato puree, chilli powder, salt, pepper and 3 vegetable or chicken stock cubes. Bring back to boil then simmer till vegetables go soft. Remove from heat and blend, Can be served with some chopped fresh parsley or without.

  • Amazing soup! We had it tonight & everyone loved it :)
    I used green onion in place of regular onion & leek. I also added tofu to the soup - loved it! I think it actually needs more spice, but that's just me :) We like our food SPICY! This is a recipe I'm going make a lot & have fun playn' around w - 4/15/09

  • This is a great basic recipe that you can add any type of veg to. I made a similar soup but with spinach added. It is very tasty. It's also easy to add some proteins to. Chicken or Shrimps. That would change the calorie count, but not by much. - 1/21/09

    Hi Curlygurl7 did you try my soup? Hope it wasnt too spicy for you! I put quite a lot of chilli in mine for that extra kick. Let me know your thoughts.

    Hey Sunshine, thanks, watch out for the chilli though, I like my soup very spicy so just use 1 tsp or miss it out all together if you want to give it to the kids and they dont like spicy stuff!. Jean
