Kelly's Pumpkin Soup

Introduction

Number of Servings: 6

Ingredients

    1 medium sized pumpkin, peeled & diced (I love butternuts)
    1 medium sized kumara, peeled and diced (any coloured sweet potato)
    2 medium sized potatoes, peeled & diced
    1-2 cloves garlic, chopped
    1 onion, chopped
    2 cubes of Chicken stock
    1-2 tsps nutmeg
    1 tbsp rosemary (dried)
    1-2 tbsps parsley (I prefer fresh parsley)
    3-4 sprigs thyme, but not stems
    1-2 tsps chilli or chilli paste
    1 tbsp salt
    1-2 tbps coarsely ground black pepper
    water

Directions

Prepare & then just leave:

Peel, chop and dice all the vegetables.

Add all ingredients (including herbs) to a large pot. Top with enough water to cover everything.

Bring to the boil, then simmer until all vegetables are soft and ready for mashing.

Mash with a masher, stirring all the time. Mash as chunky or smooth as you prefer.

Let simmer and heat until ready to serve.

This keeps well in the fridge for a few days.

Can be frozen as well as being reheated in a microwave.
