Chicken Catchatori

Number of Servings: 7

Ingredients

    1 lb bonless, skinless chicken breast, cut into large bite size pieces
    1 jar tomato sauce (approx. 27 oz)
    4 green onions (shallots), chopped
    4 cloves garlic, minced
    2 tbsp olive oil
    12 oz pasta

Directions

1. Begin boiling water for the pasta. If you haven't already, cut up ingredients while the water boils. Once the water is boiling, put the pasta in the water.

2. Heat two tablespoons olive oil in a large stainless skillet. Once the oil is warm add the green onion and garlic. Add the chicken and brown.

3. Add tomato sauce to the fully cooked and browned chicken. Heat and season to taste. Basil, oregano, granulated onion, red pepper flakes, and fresh garlic are good things to add.

4. Drain pasta when al dente.

5. Serve sauce over pasta and enjoy!

Makes 6-7 servings.
