Garlic & Onion Quinoa

Introduction

Quinoa is a wonderfully nutritious grain. This recipe makes eough for a small side dish. So yummy!

**Make sure you rinse the quinoa very well in a small mesh collander otherwise it will be very bitter.*

Number of Servings: 4

Ingredients

    1/2 quinoa, rinsed
    1/2 medium onion, minced
    2 tsp. minced garlic
    1 c. low-sodium chicken broth
    1/4 tsp. kosher salt (my preference)

Directions

Saute onion and garlic in olive oil until softened. Add broth and bring to a boil, add quinoa.

Simmer 15 - 20 minutes or until all liquid is absorbed. Fluff with a fork before serving.
