Tortellini Soup

Introduction

Number of Servings: 4

Ingredients

    * Tortellini, pasta with cheese filling, 2 cup
    * Canned Tomatoes, 1 can
    * Swanson Chicken Broth 99% Fat Free, 2 cup
    * Mushrooms, fresh, 1 cup, pieces or slices
    * Onions, raw, 1 cup, chopped
    * Garlic, 3 cloves
    * Carrots, raw, 1 cup, strips or slices
    * Celery, raw, 1 stalk, large (11"-12" long)
    * *Balsamic Vinegar, 1 tbsp
    * 1 large ball of Whole mozzarella Cheese, "Bococcini" style **
    * Basil, 5 leaves sliced into ribbons
    A little olive oil or pan spray (not included in the Cal count!)
    Salt, pepper, oregano and any other spices you like

Directions

Chop Garlic & onions and sautee in a stock pot.
When they become translucent add broth, carrots, celery spices and vinegar.
Boil for 10-15 minutes or until carrots are almost softened to your liking
Add mushrooms and boil 5 more minutes
add tortellini and boil until they float to the top, about 10 minutes. Do not over cook pasta!

top with a thin slice of the cheese and some shredded basil.

** Bococcini or Buffalo style mozarella cheese is packed in tubs of water and found in the refrigerated section.
