Spicy Catfish and Rice

Introduction

A warm, spicy & healthy meal of fish, tomatoes, bell peppers & onions served over brown rice. A warm, spicy & healthy meal of fish, tomatoes, bell peppers & onions served over brown rice.
Number of Servings: 4

Ingredients

    2 Catfish fillets, chopped into nuggets
    1 large can of diced tomatoes
    1 cup chopped bell pepper
    1 cup chopped onion
    4 tsp hot pepper sauce (adjust to taste)
    4 cups cooked brown rice

Directions

1. Empty can of diced tomatoes into large skillet. Add fish, peppers, onions & hot sauce.
2. Cook covered over medium-high heat for 20-25 minutes, stirring occasionally.
3. Cook until fish flakes easily and bell peppers and onions are tender.
4. Remove from heat and serve over brown rice: Makes approximately 4 servings served over one cup of cooked rice.
