Hippy Soup

Submitted by: FAELYNN

Introduction

My friend hates all things healthy, dubbing them "hippy", thus this gets it's name. Turkey can be omitted, but adds a great deal of flavor so I don't recommend it. SOOO much good-for-you stuff in here, and tastes awesome! My friend hates all things healthy, dubbing them "hippy", thus this gets it's name. Ingredients

    2 smoked turkey legs
    8 cups water
    1 pkg lentils (2 cups-ish)
large bunch greens (2 cups-ish chopped)
2 large carrots, shredded or chopped
    2 large stalks celery, chopped
    1 large onion, chopped
    1 can petite diced tomatoes
1 tsp dried garlic, or 4 cloves (the more the better!
    2 Tbs curry powder
    .5 tsp salt
    1 tsp pepper
(1 Tbs Braggs Liquid Aminos opt.)

Directions

boil turkey legs in water for about an hour, getting a good broth going. Remove turkey and add lentils, adding water as needed to keep it at a full pot. Pick all meat from the bones, then add with chopped veggies, canned tomatoes, and seasonings after about 20 minutes, then cook until all is tender (roughly another 40 minutes to an hour).
